"To be honest with you, brewing is 70 percent cleaning and 30 percent brewing. "It can turn your other beer sour," he says, "if the wild yeasts contact the other beers." "It's a cool style," Rose says, "but it takes a lot of time and effort." His current batch will be stored for seven to eight months in French oak Bordeaux barrels, where it will pick up notes of oak and wine. "The yeast gives them funky sour flavors," Rose says. Right now, he's working on a series of "wild ales" - beers made using wild yeasts that produce what's called a sour beer. When he's not brewing one of the recipes for his staple beers, Rose likes to experiment with less familiar styles. "The majority of people that come here are ordering beer," Rose says, "and we sell a lot more of our own beer." Those 10 beers account for 40 percent of the bar's total beer sales. The Brass Tap has 70 beers on draft, and Rose keeps South Cypress's brews on about 10 of those taps. "We sell all of our beer right here," says Mike Rose, head brewer and co-owner with his brother Mathew Baum. "I wish I had more capacity. That's enough beer to keep customers at the Brass Tap happy, but not enough for distribution. ![]() It's what people in the beer industry call a two-barrel brewery, meaning it can only brew 60 gallons at a time. Open since March 2015, South Cypress is tucked inside The Brass Tap, a craft beer bar and restaurant in North Naples. But with a head brewer who's passionate about beer and a selection of unique small-batch brews that appeal to craft beer lovers, it won't stay that way much longer.
